Fig season is short and these take three minutes.
Six figs, Roquefort, walnuts, fresh rosemary and honey. That is the whole list. You cut a cross into each fig, push the cheese in, then the walnuts, lay the rosemary over the top and pour honey over everything. Three minutes in the air fryer and they are done.
They come out warm and soft, the cheese goes just melty enough, and they look like you spent an hour on them.
Ingredients
Makes 6 · About 3 minutes in the air fryer · Serves 2 to 3 as an appetizer, and it doubles easily
- 6 fresh figs
- Roquefort, a small piece for each fig
- Walnuts, roughly chopped
- Fresh rosemary
- Honey
How to make them
- Heat the air fryer to 400°F. Line a small baking dish with parchment.
- Cut a cross into the top of each fig, but not all the way through. Press gently at the base so it opens like a flower.
- Push a piece of Roquefort into the middle of each one.
- Push the chopped walnuts in on top of the cheese.
- Sit the figs in the dish, lay the rosemary over the top and pour the honey over everything.
- Put the whole dish into the air fryer and cook for 3 minutes.
- Serve warm, straight from the dish.

A few notes
Cut the cross about two thirds of the way down and leave the base intact. That is what holds the fig together while the cheese melts.
Build them in the dish they will be served in, on parchment, and never move them again. The figs are soft when they come out and lifting them onto a plate is the one step that can spoil how they look. It is also less to wash.
The honey goes on before they cook, not after. Three minutes is short enough that it caramelizes at the edges instead of burning.
Roquefort is what makes it, but any blue cheese works.
Give them room in the dish. In one layer with a little space around each one they cook evenly and keep their shape.

- My Cosori air fryer, gifted. Three minutes at 400 and no oven to heat. That is the entire reason this recipe works the way it does.
- The Brivara ceramic dish, gifted. The figs are built in it, cooked in it and served from it, so they never get moved.
- Parchment sheets. These go in the dish, under the figs, before anything else. Pre cut, so there is no fighting with a roll.
- Rubber oven mitts. The dish comes out very hot and these actually grip it. Cloth mitts slide, which is how you drop a dish of honey.
- A small paring knife, close to mine. Figs are soft and a big knife crushes them. You want something short and sharp to cut the cross cleanly.
- Honey dispenser. The honey goes over all six at once and a dispenser gives you a thin line instead of a puddle in the dish.
