This is the dinner I have been making on repeat. Boneless chicken thighs and baby potatoes, both out of the same air fryer basket, and it takes about half an hour start to finish.
The potatoes are the part people ask about. They go crispy and golden on the outside and stay soft in the middle, and the reason is that they get boiled before they ever touch the air fryer. Ten minutes in a pot first changes everything.

Ingredients
- 4 boneless chicken thighs
- 15 to 17 baby potatoes
- 1 small onion, chopped or cut into wedges
- 3 to 4 garlic cloves, minced or left whole
- 2 Tbsp olive oil
- Garlic powder
- Onion powder
- Salt and black pepper
The chicken and the potatoes get the same spices, so you can mix them together in one small bowl and use half on each. The onion and garlic are up to you. Chopped and minced spreads the flavor through everything, wedges and whole cloves give you soft sweet pieces you can eat alongside the potatoes.
How to make it
- Boil the potatoes for about 10 minutes, then drain them and let the steam come off.
- Season the chicken with olive oil, garlic powder, onion powder, salt and pepper. Air fry at 400F for 10 to 12 minutes, until it starts to brown.
- While the chicken is going, toss the potatoes with the onion, garlic, olive oil and the same spices.
- Add the potatoes around the chicken and cook at 385F for another 10 to 15 minutes, until the potatoes are golden and the chicken reaches 165F.
- If you want the potatoes crispier, give them another 3 to 5 minutes.

A few notes
- Do not skip the boiling. That ten minutes is what gives you a crispy outside and a soft middle. Potatoes that go into the air fryer raw come out dense and a little leathery.
- Drain them properly. Let the steam come off before you add the oil, or the oil slides straight off the wet skins.
- The chicken gets a head start on purpose. It needs longer than the potatoes, so giving it ten minutes alone means everything finishes at the same time.
- Boneless thighs come up to temperature faster than bone in. Start checking at the ten minute mark of the second round so they stay juicy.
- Give them room. Potatoes piled on top of each other steam instead of crisping. Spread them in one layer around the chicken.
- 165F is the number that matters. The clock is a guide, the thermometer is the answer.
- Every air fryer cooks a little differently. I check on mine as it goes and adjust the time if it needs it, and I would do the same the first time you make this in yours.
